cooking. Cooking of raw animal foods in a microwave oven must be as follows: (1) Food must be rotated or stirred throughout or midway during cooking to compensate for uneven distribution of heat; (2) Food must be covered to retain surface moisture; (3) Food must be heated an additional 14°C (25°F) above the temperature specified in § 44:02:07:28 to compensate for shorter cooking times; and (4) Food must be allowed to stand covered for 2 minutes after cooking to obtain temperature equilibrium.
