The cleaning and maintenance of floors, walls, and ceilings must be accomplished in the following manner: (1) The physical facilities must be maintained in good repair; (2) The physical facilities must be cleaned as often as necessary to keep them clean. Cleaning must be done during periods when the least amount of food is exposed such as after closing; and (3) Only dustless methods of cleaning may be used, including wet cleaning, vacuum cleaning, mopping with treated dust mops, or sweeping using a broom and dust-arresting compounds.
